About the nutrition estimates
Values use USDA Standard Reference 28 nutrients per 100 g, multiplied by edible ingredient weights and divided by equal servings. Lentils, rice and bulgur are weighed dry; chickpeas are cooked without salt and drained. Meat and fish weights are raw. Milk is 2%; yogurt is plain whole-milk, not strained Greek yogurt. Generic dry lentils are a proxy for split red lentils; generic onion represents red onion. All specified oil, sauces and salt are counted. Chicken-skewer estimates include all marinade even though some is discarded. Kofta estimates count all raw meat fat even if rendered fat is left behind. Baba ganoush counts the trimmed raw eggplant before skins and liquid are discarded. These assumptions can overestimate consumed nutrients. Water is not counted. No cooking-retention or leaching adjustments are applied. Calories are rounded to 5 kcal; sodium, cholesterol, potassium and calcium to 10 mg; other nutrients to 0.1 g or mg. Rounded zero does not mean absent. Brands, substitutions and portion size change the values. These are estimates, not laboratory results or a product Nutrition Facts label.
