Recipe 01
Lemon & herb chickpea salad
A crisp, lemony salad to serve alongside another dish or tuck into a pita. Chop the vegetables into small pieces so each spoonful includes a little of everything.
Makes about 4 side servings · Estimated preparation: 15 minutes · No cooking
Ingredients
- 1 can (15 ounces) ready-to-eat chickpeas, drained and rinsed
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- ¼ cup finely chopped red onion
- ¼ cup chopped fresh parsley
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- ¼ teaspoon dried oregano
- Black pepper to taste
- Optional: ¼ cup crumbled feta made with pasteurized milk
Method
- Prepare the cucumber, tomatoes, onion, and parsley. Place them in a large bowl with the drained chickpeas.
- In a small bowl, whisk together the olive oil, lemon juice, oregano, and a little black pepper.
- Pour the dressing over the salad and toss gently until evenly coated.
- Taste and adjust the lemon juice or pepper. If using feta, fold it in just before serving.
Make it your own: replace some of the cucumber with diced bell pepper, or use fresh dill instead of parsley.
Allergen note: optional feta contains milk. Pita, if served alongside, commonly contains wheat. Check all ingredient labels for your needs.
